Freezing Bread Dough: For Delicious, Easy Homemade Bread

When I first started making the bread recipe that came down from my grandmother, I made it true to the recipe. Back in the 1970s I had nothing to facilitate bread making but my two hands. I made bread that way for many long years, until I got my Kitchen Aid. Some have features which allow you to delay the baking process, they will start cooking up to 15 hours later, this is great for preparing your ingredients the night before, and waking up to freshly baked bread. The smell is out of this world! and it’s all done automatically for you.

As stated, this Breadman is a horizontal breadmaker. However, it comes with only one mixing paddle – unlike other horizontal bread makers like the Zojirushi that come with two. This can cause incomplete mixing of the ingredients leaving unmixed flour foo machine in the corners of the pan. This doesn’t happen every time – it seems more prevalent on heavier mixes – but it does require you to intervene and help mix the ingredients properly.

Whole wheat flour is heavier compared to white flour, so you need to develop good strong gluten to make a soft crumb and pleasing texture. You get more gluten if you have higher protein content. Avoid adding too much flour or you risk creating loaves that are hard as a brick. Kneading continuously leads to gluten forming a consistent and strong matrix.
